It’s necessary to take the butter and eggs from the fridge in advance: they need to be of the room temperature when you start preparing the pastry. Then, turn on the oven. By the moment you have the pastry ready for baking, your oven needs to be preheated to 180 degrees Celsius.

Prepare the baking molds. Cupcakes are normally made in silicone, paper or tin molds. Silicone or tin ones need to be greased thoroughly before you put the pastry into them. If you take paper ones, it will be enough to rub them from the inside with greased fingers.

Now, melt the butter slightly (not completely!) and mix with sugar. Then, start whisking it through until the mass is airy, white and puffy. The evenness is not the only criterion: the mixture needs to have the look of whipped cream.

Now, it’s time to add eggs. If they are cold, the consistency of the pastry will be grainy and it’s not what you need. Add milk and vanilla. If you want, you can add other flavors: orange and lemon peel, cinnamon, cognac or whatever else you want to use for the flavor.
