Ingredients for Gbegiri Soup:

  • 150g of black eyed beans, it is also possible to use brown beans
  • One small smoked Titus/ Mackerel
  • One tbl-spoon of ground crayfish
  • One stock cube
  • One cooking spoon of palm oil
  • Salt and pepper

Preparation:

  1. Put the soaked and peeled beans into the pot. Pour water and cook on medium heat;
  2. Cook the beans till they soft, it usually requires 1 hour. Don’t forget to add the water from time to time;
  3. Blend the beans when they cooked, and then pour the beans again into the pot. Add the salt, smoked fish, crayfish, stock cube, pepper, and palm oil;
  4. Cook it at low heat for more five minutes. Don’t forget to stir the soup from time to time. It is ready when the oil is blended with all other ingredients, and changed color.

The name of the dish can be translated as “mixed greens.” This one is very popular on the list of Nigerian soups.

The ingredients for this healthy dish:

  • 7-10 pieces of stockfish
  • 7-10 cups of sliced spinach leaves
  • Assorted meat
  • One cup of sliced tatashe
  • 1.4 cup of sliced pepper
  • Sliced onions
  • Ground crayfish (about half of cup)
  • 2-3 spoons of locust beans (Iru)
  • 2-3 medium smoked fish
  • 200ml of palm oil
  • Three knorr cubes

Method of preparation:

  2. Add stockfish, smoked fish, one more cup of water and boil again for 15 minutes;
  3. Remove the pot from heat, and take frying pan. Pour in 200ml of palm oil, the next step is to add sliced onions, pepper, and fry it for more 10 minutes;
  4. The next step is to mix ingredients - add stockfish, cooked meat and smoked fish, stir it all and boil for five minutes, then add iru and crayfish. Boil for another 3 minutes, don’t forget to stir;
  5. It is time to add salt, a cube of maggi, spinach leaves and stir it all;
  6. Boil it for another 3-5 minutes and your Efo Riro soup is ready.

Ewedu soup

This is a top Yoruba dish with a unique taste. Good news is that it is nutritious dish that is very easy to prepare. Let’s see the ingredients:

  • Ewedu Leaves
  • Two cups of water
  • One tablespoon of locust beans (Iru)
  • One tablespoon of ground crayfish
  • One bouillon cube
  • Salt

The preparation method:

  1. The main ingredient of the soup is Ewedu leaves. Wash them well, take a medium size pan and boil the leaves on medium heat. After around two minutes add locust beans, and boil till tender, (8-10 minutes);
  2. After that, blend the leaves together with Iru, and add a little water. Blent it until you achieve semi-purée consistency;
  3. Then, put this consistency back into the pan, add the ground crayfish, bouillon cube, and salt.

  • One cup ground egusi

  1. Mix the egusi with two tablespoons of water, you should get a thick paste;

  4. Add other ingredients and cover. Cook on medium heat for more 10-12mins;
